Summer 'Side Dish' Recipes - KitchenDaily fyi











I've cooked up quite a cornecopia for you today!! Talkin' food always gets me goin'!

Firstly, I'm experimenting using the great cyber technology to forward these pretty much Vegan 'side dishes' that caught my attention when I was opening the internet this morning. With very few substitutions, I'm impressed that I can enthusiastically recommend them to my readers - for quick - highly nutritious - fresh fair -- I would serve them as a main course -- and many are great for picnics! Let me know your review of a dish or two -- Just click on the title as a link to all the recipes and great photos - and what I especially appreciated is the panel giving details on all nutrients for each recipe. Check it out and do share your comments below!!

Secondly, Our local Community Supported Agriculture (CSA) farm has begun delivery of our first locally grown vibrant veggies and herbs -- and I'm looking forward to exercising my creativity when presented with a potpourri of ingredients -- This week sooo much Rosemary -- I'm gonna have to give some away -- although I love it, it's contraindicated for enlarged thyroid conditions (as is lavender, by the way) so I'll use it just once a week. Also included this first week, a bit of rhubbarb -- just enough for a garnish/flavoring of a dish, mucho pea shoots --- a pretty new food for me --and plenty of lettuces that are promised to continue -- and with me - again trying to grow some on my balcony -- abundance now!!

Have you had experiences with a CSA /local fruits & veggies and recipe-creating that you'd like to comment on here? I'm all ears!! And, if you make a great dish and have a digital camera (on my wishlist) I'd love to post it here too!!

More Homemade Good Eats:Reviewing 2010 annual Global Vegan Waffle Party

More adventures celebrating planetary, personal and community inner healing in vegan gourmand paradise!




Enjoy a glimpse from the recent Global Vegan Waffle party Abhai and I joined in on with our Pittsburgh Vegan Meet-Up group hosted annually in the 'burgh by Dave and Jen -- it was a gas to see Dave juggling six waffle irons -- with joy and -- grace!!! Enjoy with the Happy Healthy 'burghers -and know that next year there can be a waffle party near you! What follows is a partial repost with permission of Dave W. at waffleparty.com:


We again had great fun with our vegan waffle party, with around 40 neighbors, friends, and Vegan Meetup Members bringing creative waffle toppings. The conversation was great, and individuals with a range of dietary preferences shared an abundance of vegan treats that all could enjoy.

The array of vegan waffle toppings included the following: Agave-Coconut-Cinnamon-Date Topping, Apple Butter, Apple Cinnamon Raisin Topping, Beans ‘n’ Front-Yard-Garden Greens, Blueberry Sauce,bruschetta, Carob Halvah Spread, Chocolate Cranberry Relish, Coconut Almond Granola, Dark Chocolate Waffle Syrup, Fitr Harr (spicy hot mushrooms), Fresh Strawberries and Pineapple, Fresh Walnuts, Hummus, Maple Nut Sludge, Mint Chocolate Chip “To Die For” Homemade Ice Cream (ed. note I must acknowledge Ann Lynch founder of The Three Rivers Vegan Society and vegan chef who's now branching out to vegan ice creams -- of course I put a plug in for Coconut milk base!), Mushroom Medley, Mushrooms with Squash, Papaya Cranberry Topping, Papaya Strawberry Fruit Salad, Raw Chocolate Agave Spread, Raw Strawberry Sauce, Savory Kalamata Sauce, Sesame Lime Yogurt Dip, Vegan Caramel Sauce, and several I’m probably forgetting because the topping labels went home with them. At points it was difficult to choose what to try next.

This year’s waffles included Molasses Yeast Feast Waffles, Buckwheat Barley Malt Waffles, and gluten-free Zero Excuse Rice Coconut Waffles, served hot at two arrival times: 6 PM and 8 PM. (Ed. notes again -- Dave later reported he is aware of over 70 parties that took place this year --and some are scheduled for later -- never doubt the power of one!! Hands down - the best tasting to me were the Brown rice Coconut Waffles - sweetened with Molasses -- hot, crispy and light - exactly what sweet Mama Florence would say is essential in a Belgium Waffle!)

Wish you were there.........







I had to laugh -- I just realized with all the postings of 'Postcards from Paradise' I sent during the Holistic Holiday at Sea the last week of March, I never gave my blog followers a glimpse of the actual snail mail postcard designed to share with my fellow voyagers while onboard.

The Pittsburgh Story: World Environment Day 2010




This post, I really feel justified focusing on the hometown, since WED is of global importance. What a blessing for us all that on October 15, 2009, the United Nations Environment Programme announced the selection of Pittsburgh as the North American Host City for World Environment Day on June 5, 2010. Building on the success of The G-20 Pittsburgh Summit in September, the selection of Pittsburgh reaffirms the region's place as a thought leader in regional innovation and transformation.



Here's the skinny taken from the WED website:

The people of Pittsburgh, perhaps better than most, understand that restoration of the natural environment and increasing biodiversity play an important role in economic recovery.

The story of Pittsburgh's transformation can best be told by our three (four) rivers — in our journey to reclaim them and to embrace the biodiversity they bring to our community.

As a long-standing innovator in energy and the environment, the Pittsburgh region is uniquely positioned to provide the sustainable solutions for the future.

Our region is addressing the legacies of acid mine drainage and antiquated water and sewer treatment facilities that pose ongoing challenges to water quality.
We are innovating sustainable solutions to permit emerging industries to create jobs.
Pittsburgh has known and addressed these challenges throughout its history.

Water Matters! In representing North America on World Environment Day, the Pittsburgh region will use its common, global dependence on water to advance the common goal of increased sustainability.

We will issue a collaborative, regional call to action across all sectors and the public at large to create an effort that will:

Celebrate the progress we have made to date in restoring the biodiversity of our region as we have transformed our economy, building on the position established during the G-20 Summit;

Connect other communities in the North American region in a conversation about the importance of water to increased biodiversity, economic development and environmental stewardship; and engage our citizens in actions they can take to be better stewards of our environment;

and Change our region for the better by developing a water-quality action plan and capacity for follow-through.


World Environment Day events

The United Nations' choice of Pittsburgh as the 2010 host of World Environment Day might help to allay the city's lingering global reputation as a polluted industrial center.


With a mission to promote sustainable and equitable development, World Environment Day, June 5, is expected to draw the world's attention to environmental issues. Dozens of recreational activities are planned, including an attempt to field the world's largest flotilla of kayaks and canoes. Many of the activities overlap with the Three Rivers Arts Festival and are located near The Point and North Shore.

JUNE 5 PADDLE AT THE POINT
Kayaks and Canoes World Record Attempt
Motorized boat traffic will be blocked in the Pittsburgh Pool of the Ohio, Allegheny and Monongahela rivers as Venture Outdoors and other groups attempt to set a new Guinness World Record for the world's largest kayak and canoe flotilla. More than 1,200 kayaks and canoes are needed to beat the record. (Already accomplished!)
9-10 a.m. Boat renters arrive at launch under Clemente Bridge
9--11 a.m. Boaters drop off boats and prep gear
11-11:30 am Staging and safety briefing
11:30 a.m.-12:30 p.m. Boats launch and raft up at the point
12:30-1 p.m. Record attempt!
2 p.m. Rivers reopened to motorized boat traffic

World Environment Day: Pittsburgh June 5 2010















Paddle at the Point registration tops 1,400!

Celebrate World Environnment Day with a World Record! Venture Outdoors is setting a world

Record for the largest raft of canoes and kayaks on the waters of Downtown Pittsburgh!

If you are in the 'burgh, why not join in on the fun -- come witness history in the making or sign up to join the ranks on Saturday, June 5th.

Reviewing World Tai Chi Day Pittsburgh + 70 cities worldwide



The April 24th worldwide Tai Chi Day heralded many community-building events -- I want to give you a glimpse of both local and global examples from that day. I'm also dedicating my upcoming June 12th Venture Outdoors Mindful Walking with Qi Gong and Tai Ji event to the mission of WED World Environment Day and Water Matters Global Conference here in Pittsburgh on June 5th. PURPOSES OF WORLD T'AI CHI & QIGONG DAY:

1) To educate the world of the profound health & healing benefits of Tai Chi & Qigong for individuals, communities, and nations

2) To thank Chinese culture for creating and sharing these profoundly valuable gifts with the world

3) To bring together people across racial, economic, religious, and geo-political boundaries, to join together for the purpose of health and healing, providing an example to the world.

4) To give a powerful example of how the power of the internet can be used to foster global health & healing.

I'm in awe of how well these intents were accomplished -- shared vision is powerful chi!

I'm happy to report, BodyArts Therapeutics hosted a very sweet WTCDay gathering in Pittsburgh -- and though the threatening rainy weather kept us from The Point, we were very aware of the blessings of our waters as we danced and played at another favorite natural setting - Boyd Community Center. We had a few magic moments -- starting off as we walked silently,mindfully up the path to the entrance and enjoyed the small grove of flowering trees that began showering us --welcoming us --- blessing us with sweet pink blossoms!!! Concluding our practice - we learned that two of the players had birthdays that week-end - so we ended singing happy birthday to each and every one of us - deeply celebrating the inner healer in harmony with the nature within and around us.
